Easy Blueberry Muffins


When I wake up in the morning typically my first though is what am I going to eat? I love baking breakfast items and wanted something that would be quick and easy to make so I could spend time with my family. I love that these muffins take under an hour from start to finish and that they have the surprise streusel topping!

Blueberry Muffins with Streusel!

Perfect blueberry muffins with a surprise streusel topping sure to impress at your next brunch!

  •  2 cups all purpous flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup yogurt
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 2 1/3 cup blueberries (1 cup for the batter, 1 1/3 cup for topping)
  • 1-2 tablespoons flour

  • 1 cup all purpose flour
  • 2/3 cup granulated sugar
  • 1 stick salted butter (melted)
  • 1 teaspoon cinnamon

  1. Preheat oven to 400 degrees and line muffin tin with liners
  2. To make streusel topping, in a small bowl combine the flour, sugar, and cinnamon. Add in the melted butter and stir with a fork until crumbs form. Set aside
  3. In a large bowl combine flour, baking powder, and salt and set aside
  4. In a medium bowl whisk together the eggs and sugar until well combined. Add in the yogurt, oil, and vanilla extract and combine. Mixture should be a pale yellow
  5. Fold wet ingredients into dry ingredients and combine by hand
  6. In a small bowl (you need a ton of bowls for this recipe) spring 1 cup blueberries with 1-2 tablespoons of flour. Toss the blueberries in the flour until all have a thin covering and then gently fold the blueberries into the mixture
  7. Spoon batter into muffin tins and fill 2/3 of the way up. Cover the batter with more blueberries and cover those blueberries generously with the streusel topping
  8. Place into the oven and reduce the heat to 375 degrees. Bake for 18-20  minutes or until a toothpick comes out clean when inserted into the center
  9. Cool for 5 minutes in the pan before transferring to a wire rack to cool
