Raspberry White Chocolate Cake

Raspberries are my favorite fruit so I was overly excited when my friend asked me to make a white chocolate raspberry cake for her 21st birthday! It is a light and rich cake and the raspberries add a fresh aspect to the cake that makes it perfect for the spring and summer months!

Raspberry White Chocolate Cake

  •  White Chocolate Raspberry Cake
    • 8 oz white chocolate bar, divided
    • 1/2 cup unsalted butter
    • 1 box vanilla cake mix
    • 3 eggs
    • 1 cup buttermilk
    • 1 1/2 teaspoons vanilla extract
  • Filling and Garnish
    • 1/2 cup seedless raspberry jam
    • 1/2 cup fresh raspberries
  • White Chocolate Cream Cheese Frosting
    • 1 package buttercream frosting
    • 1 package cream cheese, softened
    • 2 teaspoons vanilla extract
    • 4 oz white chocolate, melted
    • 3 cups confectioners sugar


White Chocolate Raspberry Cake

  1. Preheat the oven to 350 degrees and lightly grease two 9″ pans
  2. in a glass bowl combine the butter and 6 oz of the chocolate bar and microwave on medium power for 30 second intervals. Once melted set aside to cool slightly
  3. In a large mixing bowl, beat the cake mix, eggs, buttermilk, and vanilla extract on medium.
  4. With a spatula fold in the white chocolate and butter mixture
  5. Evenly divide the mixture between the pans and bake for 24-27 minutes (if a toothpick comes out clean from the middle, it is done)
  6. Let the cakes cool in the pans for 10-15 minutes on a wire rack before transferring them completely to the wire rack (run a knife around the edges so it is easier to take the cake out)

White Chocolate Cream Cheese Frosting

  1. With an electric mixture, beat the icing and cream cheese together for 2-3 minutes or until it is lump free
  2. Beat in the vanilla extract and melted white chocolate
  3. Slowly add the confectioners sugar 1 cup at a time and beat until light and fluffy

Cake Assembly

  1. Place on cake, flat side up, on a cake stand or a plate
  2. Spread a layer of frosting on the cake
  3. Spread the raspberry jam on top leaving about an inch around the edge
  4. Carefully place the second layer on top, flat side up and frost the entire cake
  5. Decorate the top with fresh raspberries and remaining chocolate is desired
